Pam's Pumpkin Surprise

Here is Pam's recipe for the pumpkin squares that she brought to Kay's last night. For anyone who wasn't there and didn't get to try one of these, we all thought they were wonderful! Thanks for sharing the recipe Pam.

On the Pumpkin Surprise, if you are using regular canned pumpkin, followthe recipe as listed except add 1 1/2 cups sugar.But if you are using the canned Pumpkin Pie Filling (it comes with the spices and sugar already added and you only need 2/3 of a can of evap. milk.


Pam's Pumpkin Squares
1 large can pumpkin
1 can evaporated milk
12 tsp cinnamon
14 tsp of nutmeg
2 eggs
1 dry yellow cake mix
1 C chopped pecans
1 stick of butter
Mix first 5 ingredients (pumpkin, evaporated milk, cinnamon, nutmeg and eggs) all together.
Pour into a 13X9 pan
Sprinkle dry yellow cake mix over top
1 C of chopped nuts over top
Melt the stick of butter and pour over all
Bake at 350 degrees for 50 minutes
Cool and refridgerate
Cut into square
